Look at me, I am posting something that isn’t breakfast, isn’t a dessert, isn’t covered in peanut butter and actually resembles a proper meal? Shocking, I know.
This recipe is my new obsession and I love meal prepping it for work at the moment

BURRITO BOWL

Ingredients:
Red onion, garlic
Lean beef mince
Rice
Beans
Veg
Greens
Spices
Salsa
Coriander
Instructions:
- Sautee red onion
- Add fresh garlic
- Add lean beef
- Add beans of choice (cannelini, red kidney, chickpeas…)
- Add veg of choice (pumpkin, courgette, peppers, tomatoes…)
- Add greens of choice (spinach or kale)
- Add salsa / taco sauce / canned tomatoes
- Add spices (salt and pepper, cumin, garlic, moroccan spice, cinnamon, chipotle)
- Add a little bit of water and let it simmer for a few minutes
- Make rice
- Put in a bowl and cover with fresh tomatoes, red onion, coriander
- Add natural yoghurt on top or sour cream if you’re naughty like that
- A side of a few tortilla chips would work perfectly too but I don’t know about you, I ain’t got any self-control around tortilla chips, so I’d rather not take that risk, lol
